My Boss Is Setting My [diner Redacted] Up For Failure. Stolen Benefits And Union Concerns

Some important context: I am a server at my particular diner and its not a cheap place to eat-Relatively upscale as far as diner standards go.

GM=General Manager
I have been working there for a year as of a month ago, and currently my "GCA" (Guest Consumer Average, or basically the average amount of $ spent per seat/guest) is about $23.00, the bare minimum is $15.00. My average guest visit time is 42mins, they expect 52. In other words, I exceed expectations when it comes to my standing when it comes to benefitting the company- most other servers are at, below or around the minimum expectations.
Now, to the issue- My general manager has been trying to find reasons to not like me, to the point of prejudice. Servers who are 17 and have never worked a job get better hours than me at a better time of day.
When I asked about that, the GM started going off on me because:
1: Someone else used my account to order food, which is very normal. They didn't pay, so GM used MY TIPS to pay for someone else's meal and threatened me over correcting it- STILL HASNT RETURNED THE MONEY

2: A man threatened to KILL me, was 6'7 AND on drugs, because I CONSIDERED calling the police, I never had any come, I simply considered it and hung up on the operated after explaining that the issue was resolved by my cook. He was ANGRY about that one, and it feels illegal somehow?

3:1/20 reviews I had a lady say "I'm not sure if he was but I felt he may have been a bit rude with the way he said 'oh, I thought you wanted ranch- did you still want some?' " (Context, I had 7 tables and was in a very fast rush- didn't have time to stop and put on my happy face in the moment we spoke)

On top of all of this, I have so many coworkers that work 40+ hours a week and receive NO BENEFITS, not a single thing! I live in AZ where the state PROVIDES insurance to full time employees- the company doesn't pay anything!
WHY havent they recieved their benefits?
How can I start a Union?
