Scammed For $4k But Potentially $8k. I Don't Live In The Same State For Small Claims Court. Can I Hire Someone To Represent Me? (fl + California)

I was doing a business deal with an individual where I put up $4k for them to buy merchandise and resell it to someone else. They were to pay me back $8k and personally guaranteed it.
They are many months late at this point and I am looking to pursue legal action (probably a demand letter first).
The issue is I don't live in the same state as them. They live in FL (Miami in particular), and I live in California.
I spoke to some FL attorneys who said it's probably not worth hiring an attorney because the $8k "profit" can be perceived as interest therefore I may only be able to recoup $4k. Regardless of if it's $4k or $8k, I still want the money back. What should I do? I don't want to travel to and from Miami a few times. Can I hire like a law student or something on my behalf or does it have to be an attorney?
