I Accepted A Plea Deal A Week Earlier But It Was Rescinded Without Explanation Moments Before The Trial Was Scheduled To Begin.

Luckily the case fell apart immediately and was dismissed with prejudice because they had a non-cooperative victim, had no witnesses, were unable to contact the 911 caller who's call was entirely hear-say, and the arresting officer was in training for the next week.
I know plea deals aren't binding until the judge agrees to finalize it but how can this be legal? By telling the prosecutor that I agree to the terms I'm admitting guilt to them and since I had expected to take the deal I had not prepared a defense for trial. This seems beyond sketchy and something they could do on purpose to scuttle a defense.
